Rye whiskey is the name given to the distilled liquor that is produced by the fermentation and distillation of rye. Its process is similar to that one used for making Scotch and Irish, except its mash must be at least 51% rye; the remainder can be corn or malted barley. The rye has a distinctive flavor that impart certain spiciness or pepperiness to the final byproduct and separates rye whiskey from Bourbon, which tends to be sweeter.
