Named after the town of Cognac, France, Cognac is a brandy produced under strict regulations regarding grape varieties, distillation and maturing. In order to bear the Appellation d’origine contrôlée, a French certification of quality and production in a determined area of France, the cru used to create the brandy must be produced using specific grape varieties. Cognac is made in the region that bears its name and its distinctive flavor profile is due to the types of soil present in the region.
